We serve an 8-10 course kaiseki meal featuring freshly caught sashimi, grilled dishes, tempura, and more, all prepared with ingredients landed that very day.

*Dining Area: Dinner is served in your guest room, or in the dining room on the first floor. Breakfast is served in the dining room.

Sourcing Our Seafood

Echizen is known as one of the leading fishing towns on the Sea of Japan. The fishermen use a variety of fishing methods, including fixed shore nets, trawling, and squid jigging. Accordingly, they catch a wide variety of different fish through the seasons.
At Culinary Ryokan Yamazaki, we have the privilege to participate in local auctions to acquire fresh seafood, so we can source fresh fish without going through brokers or fish markets.

Fisherman's Breakfast

We serve our own spin on a "fisherman's breakfast" made with locally caught seafood. The anglerfish hotpot we serve in April to May and September to October is an especially popular dish.

*Dining Area: Dinner is served in the dining room on the first floor.
