Echizen crab, a signature winter delicacy

From November 6 to March 20 each year, guests can enjoy Echizen Crab. All crabs served at the inn are certified brand crabs with official tags.

*Dining Area: Dinner is served in your guest room, or in the dining room on the first floor. Breakfast is served in the reception room on the first floor.

Crabs freshly-boiled in a specially-made pot

Snow crabs personally sourced by the chef are boiled in a specially-made pot to be ready for mealtime. We source extremely fresh crabs, so you can enjoy piping-hot crab. There are very few hotels in Echizen where you can enjoy freshly-boiled crab.

For a party of two, you can enjoy one bowl of boiled crab, and another bowl that is half baked crab and half crab sashimi. The crab sashimi is eaten poached in a specially-made broth.

*For parties of 3: 1 bowl of boiled crab, 1 bowl of baked crab, 1 bowl of crab sashimi
*For parties of 4: 2 bowls of boiled crab, 1 bowl of baked crab, 1 bowl of crab sashimi

Sourcing Our Seafood

Echizen is known as one of the leading fishing towns on the Sea of Japan. The fishermen use a variety of fishing methods, including fixed shore nets, trawling, and squid jigging. Accordingly, they catch a wide variety of different fish through the seasons.
At Culinary Ryokan Yamazaki, we have the privilege to participate in local auctions to acquire fresh seafood, so we can source fresh fish without going through brokers or fish markets.

For breakfast the next morning, we serve crab hotpot and crab porridge. Please enjoy Echizen's crabs to your heart's content.

*Complimentary coffee is served in the lobby after meals. Please enjoy a relaxing time after your meal.
